Ask your Provenance Village Butcher team for 12 small French-trimmed lamb chops or 8 larger lamb chops. Measure out the following spices into a wide, shallow dish along with the salt, and mix to combine: 1 teaspoon of ground coriander, 1 teaspoon of ground cumin, 1 teaspoon of ground ginger, ¼ teaspoon of ground cloves, ½ teaspoon of cayenne pepper, ½ teaspoon of ground cinnamon and 3 teaspoons of sea salt flakes. Dip the lamb chops into the spice mixture, dusting them well on all sides. Warm 2 tablespoons of garlic oil in a frying pan, then fry the chops for about 2-3 minutes a side depending on thickness, over a medium heat. They should look darkly burnished – but sill juicily pink within when cooked.
