Chef Barry says, 'the confit garlic and herb butter is designed mostly for lamb, it’s made by making a beurre Noisette and then I infuse that with rosemary and mint before blending with more butter, confit garlic a slight touch of honey. Really great to baste your lamb chops or cutlets. Or just to toss through some steamed new potatoes or some greens!'
