American Style Black Pudding Pancakes by Barry Horne
Here is a fun spin on a classic American style pancake for Shrove Tuesday by our chef Barry
(serves 4)
Ingredients:
500g plain flour
135g sugar
20g baking powder.
500ml milk
150g melted butter.
4 eggs
3g salt
150g Fruit Pig Black Pudding
Method:
Add the dry ingredients to a large bowl: (flour, salt, sugar and baking powder)
Whisk the eggs and milk together in a separate bowl and add to the dry ingredients. Then whisk in the melted butter.
Set this to one side
Put a non-stick pan on a medium heat and when hot add around 3 ladles of pancake mix to form three separate circles. After around a minute crumble your black pudding all over the liquid part of the pancake and leave to cook for around 2-3 mins. You will see some bubbles forming on top, that’s a good indicator to tell you to flip them. Cook for a further 2 mins on the other side.
I like to serve it with some fried eggs and maybe some classic Sauce Shop brown sauce.
