Irish Potato Boxty (Potato Pancakes) by Barry Horne

This recipe is perfect for using up leftover mashed potatoes and great fried up with a breakfast on St. Patrick's day.
Ingredients (makes 8-10 pancakes)
500g leftover mashed potatoes
500g grated raw potato
400g plain flour
1tsp baking powder
400ml buttermilk
Salt and pepper to taste
50g butter for cooking
Method:
In a large bowl, add all the ingredients and mix thoroughly. Add a bit more flour if needed to form a thick batter.
Place a large non stick pan on a medium high heat and when hot add a small amount of butter, drop in small ladles of the batter into the pan to form small circles.
Cook on either side for 4-5 mins until golden and the raw potato has cooked through.
Serve alongside a classic irish breakfast of sausages, rashers of bacon, black and white pudding and eggs.
