Ingredients:
1 whole free-range chicken
40 garlic cloves
3 bay leaves
1 tbsp olive oil
2 tsp sea salt
1/2 tsp black pepper
15ml water
Method

Preheat your oven to 190 C / 380 F fan.

Place the chicken in an oven-proof pan with a lid.

Add the garlic cloves, olive oil, salt, pepper, bay leaves, and water.

Cover with the lid and cook for 90 minutes or as long as needed depending on the weight of your chicken.

After 90 minutes, remove the lid and cook for a further 10 minutes.

The chicken is ready, and the garlic confit to perfection!

The garlic confit is delicious spread on some toasted paleo bread or pure seed bread.
