North Yorkshire Dexter | September Steak Club

Dexter. A true British classic and a perennial benchmark for great beef.

Small in stature but big in character, Dexter cattle are slow-growing, hardy and unmistakable, with stocky legs and glossy black coats. What they lack in size, they more than make up for on the plate: wonderfully tender, ruby-red beef with incredible depth of flavour.

Originally known as a “poor man’s cow”, Dexter cattle were traditionally kept on smallholdings across the UK and Ireland. A true dual-purpose breed, they were valued for both their milk and their meat.

This particular fine specimen was raised on the edge of the North Yorkshire Moors by our good friend and long-time collaborator, Charles Ashbridge.

We’ve got a full side - half a cow - which Adam has expertly seam-butch­ered, carefully working the carcass to maximise the amount of prime steak meat.

As always, it’s seriously limited. When it’s gone, it’s gone…

So grab yourself a few steaks, pick up something special for Sunday lunch, or load up on some 100% Dexter burgers and have a crack at recreating a Plimsoul burger at home.

Whatever you choose, it’s all bloody good.
