November Steak Club - English Pure Bred Red Poll vs. A4 Japanese Tsubaki Wagyu vs. F1 Irish Chocolate Fed Wagyu
We have a delightfully random selection of steaks for you this month. No theme here really, just three different steaks from three different countries. All certified BANGERS, of course.
Running from closest to home from farthest afield, we shall start a lovely Red Poll carcass from the green fields of Suffolk. If you've ever walked or driven through Cambridge during the summer and spotted some handsome red cows grazing the commons close to town, those are Red Polls. These East Anglian natives are fed purely on grass and are shining examples of fantastic British farming! We have a range of cuts available, skilfully seam-boned today by Adam. Please note that Red Poll is a naturally small breed, so steaks will be thick not wide if you're buying cuts to share.
A little further from home, just across the Irish Sea, we have some Chocolate Fed Wagyu from County Wicklow. These Wagyu X Shorthorn cattle roam the lush foothills and pastures of the county and also receive a portion of chocolate every day to supplement their diet. Speaking from personal experience, I find that eating chocolate every day is a great way to put on a good amount of fat, and that clearly applies to cattle as well as butchers. Expect fine marbling and a melt in the mouth texture. Please do not expect your steak to taste like Cadburys Dairy Milk.
Last, and furthest away by a distance, we are thrilled to introduce you to Tsubaki Wagyu, the pride of Osumi Island, Kagoshima Prefecture, Japan. This is Japanese wagyu, but with an interesting twist. These cows are much older than conventional wagyu - up to 16 years old at time of processing. Is it the perfect intersection between classic wagyu attributes - sweetness, mouth coating richness, extreme fatty squish - and the best features of those Basque or Galician cattle that are allowed to retire to pasture for many years building layer upon layer of flavour and complexity?
