Turkey Mince, Nduja, Yogurt Brunch with a Fried Egg by Matt Burgess

Serves 2

Ingredients:

300g free-range turkey mince 

½ onion, finely sliced  

1 garlic clove finely chopped 

1 sprig thyme 

100g Ndjua

3 tbsn yogurt 

2 fried eggs 

2 tbsn chopped basil 

Flatbread

 

Method:

Heat a pan over medium heat and add a small amount of oil.

Add the sliced onion and chopped garlic to the pan and cook until the onion is translucent and the garlic is fragrant.

Increase the heat and add the turkey mince to the pan.

Cook the turkey mince, stirring frequently, until it is browned all over.

Add the nduja to the pan and stir until it melts into the turkey mixture.

Sprinkle the thyme leaves over the pan and mix well.

Reduce the heat to low and let the mixture simmer for a few additional minutes, allowing the flavours to meld together.

Fry the eggs in a separate pan.

Smear the yogurt on two plates.

Spoon the turkey mince onto the yogurt.

Top with fried eggs and chopped basil.

Serve with toasted flatbreads.
