Slow-cooked Lamb Shank Kleftiko by Matt Burgess
Feeds 4
Ingredients:
4 x lamb shanks
3 sliced garlic
1 onion diced
2 sprigs rosemary
4 sprigs thyme
2 tbsn oregano
1 tsp cinnamon
2 cups cherry toms
4 bay leaf
2 lemons juiced
2 tbsn olive oil
300g waxy potatoes halved
1 red pepper diced
1 cup white wine
2 tbsn salt
Few sprinkles of crumbled feta
Few leaves of fresh oregano
Method:
- Preheat the oven to 180deg C.
- Put the lamb shanks in a oven proof casserole dish with the potatoes slotted in throughout and spread the garlic, rosemary, thyme, oregano, cinnamon, bay leaves all over the shanks. Add the lemon juice, white wine, cherry tomatoes, salt and olive oil.
- Place a lid on and bake for 2 hours and 30 mins or until lamb is falling off the bone
- Serve into a bowl and finish by scattering over the feta and fresh oregano
