September Steak Club | Chianina Sangiovese x Castello Tricerchi Wines
Good evening Steak Club family,
As the days are getting shorter and it is getting colder, we’re moving away from the long evenings outside and start thinking about wrapping up cosy and spend some time indoors.
This doesn’t mean that we cannot celebrate summer for ONE LAST TIME and enjoy some of the best beef that Italy has to offer.
Meet Chianina Sangiovese – one of the oldest and largest breeds in the world. These white-skinned giants are famous for their role in Fiorentina Bistecca. Their meat is visually lean, but don’t be fooled - it is packed with incredible amount of flavour, especially when cooked on hot coal! Tenderness is guaranteed in every bite!
But that’s not the end of it. We thought ‘there are a lot of wine heads in the Steak Club, why don’t we pair this special meat with some special wine?!’
And this is exactly what we did!
In cooperation with Olivia from NewGen Wines we selected two amazing bottles from Castello Tricerchi, the winery extending over 400 hectares of the northern slopes of Montalcino, so let’s hear a bit more about it. 13 of the 400 hectares are dedicated to the cultivation of Sangiovese Grosso, the vines which produce Brunello and Rosso di Montalcino.
The vines are almost exclusively north facing which allows for uniform ripening. All cultivation methods are based on organic principles and respect for the intimate relationship between man and nature.
