Easy weekend centerpiece? What about a very tender, juicy piece of roasted pork infused with herbs: porchetta?

Portion suggestion: 250g-300g per person

COOKING INSTRUCTIONS:
Pat dry the skin on porchetta and bring it to the room temperature.
Preheat oven to 200'C and cook for 25min to crispen the skin. Then turn down to 140'C and cook for further 55 minutes per kilo.
Internal temperature should reach min. 70'C
INGREDIENTS: Free Range Pork Belly and Loin, Fresh Herbs (garlic, oregano, fennel seeds, parsley), Lemon juice, Salt, Pepper, EVOO
